Spring!
Strawberry's season and i've got sooo many ideas for recipes with this sweet, little, delicate, beautiful red fruit!
Few days before i made my first sugar free jam (you can see how to make it here) and i decided to use it making a cake!
I used my easter molds from Silikomart " Happy Easter" and i made my small cakes as eggs and bunnies, cute right?

Strawberry cake! (by Mamangelic.com)

for 5 cakes happy easter ή 7-8 muffins
Ingredients (diary free, eggs free and sugar free)
- 75 gr. strawberry sugar free jam (click here to see how you can make it on your own)
- 20gr. almond meal
- 1-2 gr. baking soda
- 1/2 tsp. baking powder
- 1/2tsp. apple vinegar
- 90 gr. coconut milk (i prefer homemade, click here how to make it)
- 65 gr. honey
- 150gr. self raising flour
- vanilla seeds or vanilla extract
Directions
Mix everything in a bowl and then just pour in the silicon molds.
Bake at 170oC temperature in the oven until they get the right colour (i baked mine for almost 30 minutes).
