Ingredients for 200 gr. of chocolate
For a dark/ bitter chocolate 70% with cacao paste/liquor
- 120 gr. cacao paste
- 60 gr. coconut sugar or brown sugar
- 20 gr. cacao butter
- beans from the half of a vanilla
For a dark/ bitter chocolate 70% with cacao powder
- 54 gr. cacao powder
- 60 gr. coconut sugar or brown sugar
- 86 gr. cacao butter
- beans from the half of a vanilla
For a milk chocolate wih cacao paste/liquor
- 24 gr. cacao paste
- 80 gr. coconut sugar or brown sugar
- 56 gr. cacao butter
- beans from the half of a vanilla
- 40 gr. milk powder or coconut milk powder
For a milk chocolate wih cacao powder
- 10 gr. cacao powder
- 80 gr. coconut sugar or brown sugar
- 70 gr. cacao butter
- beans from the half of a vanilla
- 40 gr. milk powder or coconut milk powder
For a white chocolate
- 90 gr. coconut sugar or brown sugar
- 60 gr. cacao butter
- beans from the half of a vanilla
- 50 gr. milk powder or coconut milk powder
Directions
Use bain marie method to melt cacao butter and cacao paste and add the vanilla beans.
Add the sugar and the milk powder (or only the sugar if you are making the bitter one) in a coffee grinder and grind them.
Pour the sugar and the powder to the chocolate mixture and stir.
Put the chocolate into molds and freeze to harden.
That's it!

Ps. you can feel the sugar in your mouth a little bit but as i don't have a melanger i can live with it!
The taste is just phainomenal!
